Masterful. Not salty at all. Moist and juicy as heck. Served on a toasted fresh bread.

If I learned to make this I’m sure I could sell 100’s a day. Really amazing flavor.
 
I love porchetta. I've only had it 2-3 times in my life and it was otherworldly. There is nothing like it.

I tried replicating a simple one a couple a couple of years ago (can't remember what I did, but it wasn't a traditional one with pork belly and cracklin skin).

Some of the flavors were there, but it was too salty and didn't have the crisp skin. At some point in my life, I'm going to try it again with all of the proper components.

there used to be a place in Rogers City that made an amazing porchetta “occasionally”, I got lucky for two seasons. Last year they didn’t do it. My sister in law told me that the place has now closed! I’m so sad to hear that.
I’d say theirs was beautiful but, plain as a mud fence compared to that!

Oh I’ve watched maybe 20 videos on Italian porchettas now. It’s on the list of foods to make. It’s not complex at all.
 
Yep, I was going to say the same thing yesterday, but then I wasn't 100% sure. But no skin on my Costco pork belly slabs either around here (WI).
 
Our Costco in Apex, NC has skin on pork belly as well as the 2' strips skin free. Pork belly must be popular in the south...

Beautiful pics, Brett! We've been able to visit Rome several times extending business trips and once on our own to take my MIL (her choice of anywhere she wanted for 80th birthday -- long ago. I loved to wander the back streets and found some amazing places I would have missed otherwise. Great to see you enjoyed yours.
