The "Bath" - a mixture for stewing Beef or Pork

The "Bath" - great for tacos, burritos, enchiladas & machaca.

4 cloves garlic, minced
1/2 a 7 oz can Chipotles in Adobo chopped - or less if you're a wimp
1 small white onion, finely chopped
1/4 cup fresh lime juice
2 tablespoons apple cider vinegar
3 bay leaves
1 Tablespoon ground cumin
1 Tablespoon Mexican oregano - fresh grind from whole
2 teaspoons salt
1 teaspoon black pepper
1/4 tsp ground cloves
1 12 oz. beer

Place mixture in a 13" x 9" cooking pan.
Place smoked meat in mixture & cover tightly with aluminum foil.
Check occasionally & add more beer if the mix is drying up.
Cook in covered grill, smoker or oven at 350* until meat falls apart - 2 1/2 hours or more depending on size of roast.
Shred meat in the juices.
