Thanksgiving Leftover Casserole

Ingredients
  • Pam, for the baking dish
  • 4 c. leftover stuffing.
  • 4 c. chopped skinless leftover turkey (or use rotisserie chicken)
  • 1 1/2 c. coarsely chopped leftover green beans
  • 1 1/2 c. leftover gravy
  • 3 c. leftover mashed potatoes
  • 1 c. shredded Cheddar cheese (about 2 oz.)
  • Cranberry sauce, for serving
  • 1/2 cup Craisens (optional)

Directions

  1. Position a rack in the lower third of the oven and preheat to 375º. Spray Pam on the bottom and sides of a 9-by-13-inch baking dish. Layer the stuffing into the baking dish and pat to make even.
  2. Scatter the turkey and green beans over the stuffing layer. Spread Craisens on this layer - if using.
  3. Pour the gravy over the Turkey and Green Bean layer
  4. Combine the mashed potatoes and Cheddar Cheese in a medium bowl and mix until smooth.
  5. Spread the mashed potato mixture over the turkey layer.
  6. Cover and bake until heated through, about 30 minutes. Uncover and bake until the top is golden brown and crusty, 20 to 25 more minutes. Remove to a rack and let cool about 10 minutes before serving. Serve with a dollop of cranberry sauce on the side - if desired.
