Thanksgiving Leftover Casserole

Ingredients
- Pam, for the baking dish
- 4 c. leftover stuffing.
- 4 c. chopped skinless leftover turkey (or use rotisserie chicken)
- 1 1/2 c. coarsely chopped leftover green beans
- 1 1/2 c. leftover gravy
- 3 c. leftover mashed potatoes
- 1 c. shredded Cheddar cheese (about 2 oz.)
- Cranberry sauce, for serving
- 1/2 cup Craisens (optional)
Directions
- Position a rack in the lower third of the oven and preheat to 375º. Spray Pam on the bottom and sides of a 9-by-13-inch baking dish. Layer the stuffing into the baking dish and pat to make even.
- Scatter the turkey and green beans over the stuffing layer. Spread Craisens on this layer - if using.
- Pour the gravy over the Turkey and Green Bean layer
- Combine the mashed potatoes and Cheddar Cheese in a medium bowl and mix until smooth.
- Spread the mashed potato mixture over the turkey layer.
- Cover and bake until heated through, about 30 minutes. Uncover and bake until the top is golden brown and crusty, 20 to 25 more minutes. Remove to a rack and let cool about 10 minutes before serving. Serve with a dollop of cranberry sauce on the side - if desired.
