They serve rib tips (actually the chine bones from the loin) with a very hearty spice rub.

These are the same cut of meat sold by Applebee's as "Riblets".

Tom's sells them by the pound. A little chewy, and very unique.

I had the pleasure to go to Tom's yesterday as I was passin thru Memphis. Tom was there and invited us back to see the pit and how he cooks. Into the bowels of the ship so to speak. Wow. Great guy and great food! LARGE portions, friendly and fast service.
