Temperature Control


 
IMO could be more than one reason for your problem:
1) how new is the WSM. Probably You soffer some leaks that increase T
2) you start with too many lit briqs. Try 8/10 lit briqs to start (for the 22 WSM)
3) you need some water for sure. iI use 1 lt in a diaposable pan on the meat grate. No water in water pan.
