Tacos Al Pastor

Started out with some yellow peppers, Mexican onions and cactus on the grill.


While that was on the grill into the kitchen to prep the toppings for the tacos. Onion, cilantro, limes, queso fresco cheese and some radishes.


Cooked the al pastor in a CI skillet and warmed up some corn tortillas


While we were at the Market we picked up a lb of carnitas that were already made. Not bad but part of it was dry.

Beautiful John. San Diego and Los Angeles have the very best Mexican food imo. We've got a few markets up here that are also good and carry authentic foods, but it's just everywhere down there. I always enjoy eating at Las Cuatro Milpas when in your area. Your cook is great!
 
John, you always cook the best looking food. Right up my alley. Your pics more than do your food justice. What do you shoot with?
 
We do have good Mexican food here and I try to copy a lot of it. I have never ate at Los Quatro Milpas before. I have heard great things about it but the line is always so long there.

As far as pics go I was using a Cannon Powershot but it went belly up. Lately I have been using my Iphone 4

Alpastor is my favorite. Plated pic looks delicious and something my mother would serve me.
 
John your meal looks superb as always. I have a question. Is the cactus prickly pear cactus, and how do they remove the thorns?
We don't see much cactus here in the heartland.
