This recipe will require the use of a spring form pan for your pressure cooker. Maybe not necessary as the blog post says, but makes for a nice presentation. Mine didn’t come out quite like the picture, maybe my tortillas were too small. But it was quite tasty and I would make it again, with better preparation.
Taco Pie
1 package of flour tortillas (I used low carb Mission)
1 lb ground beef
12 ounces Mexican style cheese (I only had Mozzarella in the house, whoops)
¼ c refried beans
1 package taco seasoning
Your favorite taco toppings
I hadn’t planned on making this, so I only had scallions lol
Directions
Prepare beef according to taco season packages.
Lay 1 tortilla into the bottom of your spring form pan.
Cover in a layer of beans,
Sprinkle with a layer of cheese.
Add tortilla.
Top with more beans, beef, and cheese.
Repeat until you have used all ingredients.
Note: You will likely have tortillas left,
In the pressure cooker place your trivet in the bottom of your pot and add 1c water, and cook on manual high pressure for 10 minutes and Quick Release
Allow to cool and serve with your favorite toppings.

Enchilada Sauce
1/3 cup Salted Butter
3 teaspoons Cumin ground
2 teaspoons Dried Oregano
2 teaspoons Coriander ground
2 teaspoons Onion Powder
1/4 teaspoon Cayenne Pepper ground
1 1/2 tablespoons Erythritol (I try to do low carb, I used Stevia)
12 ounces Tomato Puree also called Passata
1/2 teaspoon Salt
1/2 teaspoon Pepper ground
Place the butter in a saucepan over medium heat.
Add all ingredients except the tomato puree and saute for 3 minutes, or until fragrant.
Add the tomato puree and stir well.
Simmer the sauce for 5 minutes to infuse the spices. Add a little water if you like your sauce to be thinner and adjust the seasoning to your taste.
Use straight away or cool for 30 minutes before pouring into a heatproof jar and storing in the fridge for up to 2 weeks.

I had to thin this out a bit as it was very thick. I could not find a 12 oz can either, so I had to scale the recipe up in Paprika, so I had a lot left over and froze some.
