Figure I'm doing the hottest cook I can possibly do tonight. Ultra high heat. Photo Buckets's down so here's a teaser until she comes back up......

Oh man, right up my alley. Nice heat in there! Look forward to seeing the salsa shots and what you put it on. Unless you have a great curveball with another use. Either way,will be great !
 
Ok. Here's a shot.

Pulled these off the plants this afternoon. Been smoking at 175 for about 4 hours so far.

Another 20 hours or so and they'll be nice and brown. Pineapple habañero sauce here we come...


 
Pit took off on me. (I have some bottom vent maintenance to do.). So they're finished about 12 hours ahead of schedule.

When they cook fast like this the peppers don't take as much smoke flavor and, in my opinion, lose some of their taste profile. (I know. Who can actually taste habneros.....).

Anyway. They'll do.

Warning to anyone who tries this. When you smoke and dry a pepper it concentrates the heat.

A smoked pepper is much hotter than a fresh one. Tried just a tiny bit of one of the smoked serranos below. I'd put it about 3X the heat of one of the fresh habaneros.

If you're woking with smoked habaneros - especially if you're going to grind them - goggles and gloves are a must.

Will post up pics of the sauce probably next week. Pineapple needs to ripen. May do pineapple / habañero / mango or something fun like that.

I'll also post up some better shots once photobucket is up and running.

truer words were never spoken! A couple of seasons ago , I had a bumper crop of habaneros and I dried a big bunch of them. (This was before I got my smoker...did them on an electric dehydrator).
I ended up with these jars full of whole dried habaneros and that mason jar full of ground up ones. That " habanero death dust" is so potent I can not believe it! One pinch of that in a big bowl of chili will make flames shoot out your nose!
BTW , if anyone would like some , send me a PM. And I'll happily share. I could never use all this in 5 lifetimes.
