Super Bowl ribs

My son is having a little Superbowl get together for a few of his buds and I volunteered to smoke some ribs. The local supermarket had back ribs on sale for $2.88 lb....not too bad.

These have been on the WSM since about 1 o clock. Just as a little aside here. I went without the brick I usually use as a heat sink because I wanted to cook a little hotter and faster since I'd like to leave here by 5 with the ribs all done....but it seems like those four racks of REALLY meaty ribs are quite a heat sink by themselves and the smoker was hard pressed to hit 250 for quite a while....just how it seems to be working today.

just came back from checking on the wsm.....cruising at 250 degrees with no heat sink whatsoever and all vents open wide. I really wish it was at 275 , but I'm going to leave it be 'til 5 o'clock and see where I'm at.
had to look just once and take a pic to share....they look good and the smell that hit me when the lid came off made my mouth water.

Wish I could get meaty baby backs in my area. They are not even worth buying here.

thanks man. These things are HEAVY , brother ! Each rack felt like a 'gator tail when I lifted them. I wish I could've gotten them on earlier , but sweetie wanted us to go to church , and , you know I need The Lord on my side as much as possible , so I had to roll with the punch.
 
They look great. Did you mop or foil? I have found you can cheat on the low and slow in a pinch if you foil. Add a little apple juice to the foil and they come out tender and delicious.

I didn't mop or foil this time. Time constraints being what they were , I wanted to just leave the lid on and cook. I. Feel like they came out nice and moist . These ribs were so thick , I think you'd have had a hard time drying them out if you wanted to.
