Sunday's Peach wood Smoked Turkey!


 
Thanks guys! I did not use any water in the water pan, just foiled it. I had all vents, wide open, dumped a full chimney of charcoal on top of the unlit coals, and let her go. The smoker ran at a solid 250F for most of the cook, and slightly crept up to about 275F toward the end of the cook.
