I started to get a craving for ribs during the middle of last week, so I actually thought ahead for once and defrosted a couple racks of spares from my freezer.  These came out good but not great - the bark had nice flavor with just enough smoke and the right amount of seasoning, but due to a hungry family I had to pull the ribs off the grill an hour sooner than I would have liked, so the tenderness wasn't quite where I wanted it to be.  Oh well, can't win them all  .

I got to try a new rub with this cook - "The Most Powerful Stuff" from the Pellet Envy team's EAT Barbecue line of products. I liked this rub a lot and will definitely be buying another bottle when my first one runs out.

Some action shots of the spares, both uncooked and after a couple hours on the grill. Apple wood provided the smoke and Wicked Good lump provided the heat.
