Quick version , slice long ways across breast to butterfly open , pound gently just to even out chicken for even cooking
Insert your choice of chesse , id recommend block style cause melt slower , add in Ham fold back over
Seasons or rubs of your liking , i really like swine life Grit an Grind for chicken !
fire up smoker 275 , takes bout 2 hours to get chicken to 165+ internal
once chicken is "done" apply sliced chesse my choice was swiss inside an out , allow swiss to melt for few min gives a "sticky" topping to apply bread crumbs too !

Quick tip for panko bread crumbs. Take pan melt 1/4 to half stick butter , once all melted add in cup of panko bread crumbs , then hit those with some seasonings I used heath riles garlic butter rub ... only take a few seconds for panko to absorb butter and flavors , take out of pan put in bowl till ready to apply to chicken
