We fired up two racks of baby backs today and this may have been my best cook yet. We did one rack with Bad Byrons and another with a Bbq Spot dry rub. Both turned out incredible and I can not wait to do again with a bigger group to share. The WSM ran around 250 all day super easy. Weber charcoal is amazing!

I did 3 hrs unwrapped with a spritz of ACV and beer every so often. Wrapped them in foil for about 1.5 hours and then unwrapped for 30 minutes to finish them. If anything they fell the bone a little easy but still had a great bite to them.

Those look great, that smoke ring is fantastic. I got some spares ribs today I will be following times close to yours on those two racks this up coming weekend.
