Picked up a couple of packages of Back Ribs and wanted to try a new flavor profile. Here's how it went:
First I removed the membrane and made a rub with some Maple Sugar added.

Wrapped them up in plastic wrap and back in the fridge for an hour. Pulled them out and got the WSM started with some Hickory and Apple wood for smoke.
Here we go . . .

The WSM is really becoming more and more stable with each use. Much less babysitting!!
After 3 Hrs

Into the foil with a mixture of Marsala wine and pure New Hampshire Maple Syrup.

What to do for the next two hours? Oh, I have an idea . . .

One more hour to go after mopping with some homemade BBQ sauce (more maple syrup in this too)

Time for dinner
