Sunday rib experiment

I've been working on my ribs again on the WSM. This experiment was on the 18.5" with my guru NanoQ and Kingsford briquette. I used Plowboy's Yardbird for a rub. Set WSM up at 225 with apple wood. Let rub soak in for 1 hour before putting on pit. Cooked for 3 hours then wrapped in foil for 90 minutes. Finished on pit for about an hour, untill toothpick tender. Ribs were glazed once with my comp. glaze.

My family and official taste tester thought they were my best ribs yet. I felt they were a little dark.

Randy, I would not care if they came out <span class="ev_code_GREEN">GREEN</span>, I'd eet those in 2 minutes, 23 seconds!

I worry least about appearance and put all my stock in taste 'n flavour.

Randy those look great. Why do you feel they came out too dark. They look good to me.
On a different subject, how do you like that NANO Q? I have been considering one for some time now and I'm finally ready to pull the trigger. I just can't bring myself to pay the extra for the DIGI Q II. Any pro/cons? What fan size are you using? Sorry to bombard you with this but there is not much out there about that system. Thanks in advance.

The color of the ribs is just a perfectionist thing.
I like the NanoQ. I bought it for cooking ribs so temp control is all I needed,already have a Procom4. It is simple to use and works great. I have a 4cfm fan and a 10cfm fan. The 10cfm is the better deal.
