Sunday Leg of Lamb

I've been wanting to do one of these for while, so Sunday was the day.

Costco Leg of Lamb roast:


Coated it with SPOG and some fresh rosemary from the yard, then vac-sealed it and into the fridge for the night:


Re-seasoned with a light coat of Butt Rub before putting it on the WSM. Took 3 hours with 2 chunks of Hickory at 275F to a finish temp of 145:


Came out a very nice medium with a surprisingly good smoke ring in such a short time. Might only go to 140F next time, but for the first attempt I didn't want it too rare:


Even my 14 year old ate it! Thanks for looking!

I'd love to post pics, I have tons...........it's almost impossible to get pics from my iphone on the site.........I've hit my personal limit with passwords and user id's.......someday maybe I'll be able to get some uploaded. btw, the leg of lamb looked crazy good...
