Came across a london broil in the freezer last week,threw in the fridge to thaw for Sunday. Sat. afternoon put the roast in a plastic bag w/ herbs & seasonings. Found a near empty bottle of Johnny Fleeman's marinade in the pantry,about 1/2 cup is all that's needed.Pour it in, burped out air,tossed back in the fridge.Sunday morn.set the meat on the counter.That afternoon,took out nola mae,and set her up w/ used charcoal,indirect heat.Lit a dozen coals in the starter.When the coals were ready, dumped them in,stuck the probe in,closed her up.
A good time to use salvaged charcoal.

After about 20 min. checked tem.-200*closed intake down to 1/2
10 min. later temp.230*closed intake down to a little less than 3/4
It settled in around 256*Two and a half hrs.The It.was 138 Pulled it off let rest loose foil tent 30min.

Served with smothered cabbage w/ country ham seasoning and rice.
