Michael C. TVWBB Gold Member Oct 29, 2023 #1 I picked up a small flat brisket from my local Aldi store, smoked 2hrs at 250F, wrapped in foil for 4 hrs, then rested for another 2 hrs, this method seems to work best on my smoker. Brisket was tender and juicy, it was really good!
