Suggestions for pork butt trimmings

After cutting up two boneless pork shoulders for country style ribs, I've got some lean pieces and a bunch of fat.

Looking for suggestions

Lean pieces. I'll likely make char sui with these.

For size reference the pyex dish is a standard 13"x9" and the baking sheet is a half sheet 18"x13"

I have some nice pieces in the freezer for the next batch of CSRs so I'm looking for other ideas.

That fat is money via sausage. I would never cut up a pork butt for CSR's, however they are plentiful where I live.
 
Grind it for ragu. Or sausages (breakfast or Italian). Mix ground pork with beef for meatballs. Diced and into beans for baked beans. Render the fat and use instead of oil in cooking or save it for carnitas cooking in a pot.
 
I eat them a several times a year. I usually hit them with smoke for 2 hours, followed by braising them in BBQ sauce & apple juice in a covered aluminum pan.
