A while back some asked if you could remove the sugar from my Thai jerky recipe. I finally got around to making a batch without sugar. To do a fair comparison I also made a batch with sugar. I didn't add any other seasonings just the base ingredients. Smoked at the same time with cherry smoke.
Several friends and I did a blind taste test and none of us could determine which batch had sugar and which batch did not. So the answer to the question is yes you can omit the sugar.
Note: make sure that the soy sauce you are using does not have sugar added. I use Kikkoman brand and it does not have sugar. Typically fish sauce has no sugar. I use Red Boat Brand and it does not contain sugar.
I probably will omit the sugar from now on. Why add it if its not needed.
