Made my first run yesterday with my new WSM 18.5 and the ribs were fantastic!! Can't believe how easy it was or that I waited so long to get one?! Quality product.Required very little attention during the cooking process leaving ample time for frosty adult beverages. Next is a brisket and a pork butt.BTW,how far do you go in cleaning the cooker afterwards? I went crazy but that was my OCD kicking in!! Thanks for the advice,appreciate it and this website!! Matt
 
What is this "cleaning" you speak of? You mean dumping out the ashes every couple cooks? :)

I stopped using water because it was one more thing to worry about. Now when my water pan gets a little too greasy I toss it on the Performer with a big batch of charcoal and burn it out. But then again, my smoker doesn't sit more than a week or two between uses. If I wasn't going to use it for months, I'd probably start a wood fire in it to burn all the gunk down to ashes.
 
Great looking cook Matt! It's amazing how well these things run themselves if you start them right, so don't give all of the credit to the machine, you as the operator started the cook out right, nicely done!

For cleaning I'm pretty finicky about the grates. I'll bring them in and scrub them spotless after each use. I wrap the water pan, so clean up is pretty easy for that. Other than that, maybe once in a blue moon I'll wipe the WSM down with Greased Lightening or such.

Ribs looks great ! Congrats !

Cleaning- I use trays in my WSM so the smoker never really need "cleaning". Just dump the ashes.
Best of luck with the Brisket. Let as know how u do with that.
