Decided to try a stuffed pork loin on the Mini and watch some football on Sunday.  
Stuffed with dressing and some shrooms:
		
		
	
	
		 
	
Rolled it up tight and lathered with mustard and a brown sugar rub:
		 
	
Threw it on the mini with some apple wood:
		 
	
Finished with some homemade raspberry bbq sauce and pulled at 140:
		 
	
		 
	
Let it rest and sliced er' open. A little smokier than I wanted but still had good flavor:
