Stuffed Chicken Roll Ups

Hey Everyone,

Got out of work a bit early today as a head start to our family vacation (Eagle River, WI). I had some extra time so decided to roll up some chicken rolls. Started off with 2 good sized chicken breasts, butterflied and hammered them down, covered in a bit of EVOO, seasoned with a bit of Chef Merito & Cavenders:

The stuffing ingredients were very lightly sauteed spinach, duxelles, shredded asiago, and salami:

I added some diced bacon to the other one (that one's for me):

And here we are outside, ready to get things started on the Blue Performer. I won't have too much more time with this baby, as I'm selling it and upgrading to the new 2015 model (in Crimson red) in a few weeks.

I'm not cooking these yet, but wanted to get a pic since the sun was still out. Waiting for a buddy to stop by before we get rollin. A good brew is waiting for me:

Started them off indirect at 350:

I served them with a mayo based sauce infused with thyme and orange peel, which I normally use for dipping shrimp. Next time, I think I'll omit the salami, and less salt, since all the stuffing ingredients are pretty salty to begin with.

Thanks Jose, I actually saw your stuffed chicken breast post the other day, and it gave me inspiration, since I haven't done these in a while.

those look awesome, definitely inspired, I've never stuffed/rolled a chicken breast before, only done pork tenderloins, def adding this to the list
