Strip Loin Roast leftovers

Hi all, I am ISO leftover recipe ideas for a Strip Loin Roast. Picked up a nice 5 lbs roast on sale at the local Giant and did it rotisserie stye rubbed with just some salt and pepper. The roast turned out great but now I have a lot leftover. If anyone has any recipes I would most appreciate it. Right now I am thinking some basic quesadillas, some steak tacos and maybe a beef stew. There is quite a but left so I can certainly do more than one dish. I am open to ideas and suggestions.

Slice it, vacuum seal (as best you can) and freeze it in serving size portions. Thaw for some great sandwiches down the road :D
