We received 8 to 10 inches of rain in 24 hours and a lot ended up in Folsom lake. Here is the lake level elevation graph... 20211029_145805.jpg

What was the final temp on the TT? It looks pretty rare but pretty tasty

Sorry I didn't notice your question.

I didn't temp it... I pull it at 120, and let it rest until sides are close, and then sear it until it feels right. I'm guessing 130 ish.

The color is perfect, from center to edge, no change. I like to get a little crust on my TT. Back in the day, the method was to blacken the outside and be rare in the inside. That was the late 60's / early 70's

That's how I learned to cook tri tip, and occasionally it was cooked right, but often it was over cooked in the center.
