More About Tri-Tip

Beef tri-tip is very popular on the West Coast and is often prepared in competition in
California. Sometimes called triangle roast, the tri-tip comes from the bottom round. It's
nicely marbled, tender, and one of the best-tasting cuts of beef you'll find--if you
can find it, that is. Tri-tip is readily available in California, but in some parts of the country your butcher will just look at you funny if you ask for tri-tip...they have no idea what you're talking about.

Tri-tip is often cooked "Santa Maria Style", a traditional method originating in the days of Spanish ranchos in the Central Coast region of California. The whole tri-tip roast is seasoned heavily with garlic, pepper, salt, and cooked slowly over oak coals. Tri-tip is also cut into thick slices and marketed as culotte steaks.


Seems to be a West coast thing, as I can't find them in the stores here in Dallas.
