Stoker probe wires

So I've ordered the Stoker, but am wondering where I'm going to run all those wires into and out of the WSM. I would think if I use the vent holes, that'll prevent me from being able to close them, and may the wires burn touching the metal? Am I missing a duhhh answer?

Most probe wires are small enough that you can just run them under the lid. They do make eyelets that replace some of the screws in the unit if that appeals to you more (search guru eyelet).

However you choose to run the wires, be aware that they can be damaged by high heat if, for example, you leave the lid open for too long. I ruined a probe by leaving the lid open while I was foiling some ribs.

The insulation on the probe wires is fine for normal cooking temperatures, but it doesn't take long for your fire to get really hot when that lid is off.
