Stogies 10 BB racks-at-a-time questions......

Greetings everyone,

Doing Thanksgiving tommorrow(Sat the 22nd)at Moms tommorrow and she wants me to do BB. I need to get 8-10 racks on the WSM at once. I've only done BB's a couple times and was wondering if anyone could give me some tips on doing this many at once.

I'm wondering about cook times. I will be using the BRITU recipe. From looking around on this site it seems cook times are all over the place because everyone is cooking at different temps...

That's because time always depends on temp.

If you use the temps and procedure outlined in the recipe timing should not be appreciably different. But you should always test for 'done', not assume it based on time.
 
As a general rule, I give myself 6 hours for ribs. They're done when they're done, but if I plan my event around knowing the ribs will take about 6 hours, it's worked out pretty good. If part of your question is whether it will take longer to do that many ribs, my experience is that it's not a lot different. So if you're planning on eating around 4, I get the ribs on the WSM at 10am and I ask guests to be there around 3. I always have some veggie w/dip or some type of light appetizer out so people don't get overly hungry if there's a wait. I will pull no ribs before they're ready.
 
An additional note .. Stogies method requires that you rotate the ribs every so often so additional time should be added for this process which includes the pit coming back up to temp.

Thanks everyone. Dinner is kinda late at 6pm, I'm thinking I will start the ribs around 12:30pm. using the BRITU times/temps. I figure it may take just a bit longer as I will be opening the WSM to rotate the ribs....

Ron, I think you're pushing it at 5.5 hours. Remember, it's much easier to hold bbq than to rush it. Personally, I'd start earlier. Like 10:30 or 11.

x2! i want to see 10 slabs on a WSM! most i've been able to fit is 9. would love to learn how to sneak one more slab in there!
