Still another smoked meatloaf for Game Day

Blend of 1.5 lbs. 93% ground beef and 1 lb. ground pork. Then my standard meatloaf ingredients--sauteed diced onions and peppers (yellow or red), garlic, 1 egg, 1/2 C grated parmesan, 1/2 C panko bread crumbs,, 1/4 C milk to make panade with panko, (I added sauteed mushrooms to this one), S&P to taste, 5 shakes Worchestshire sauce. Mix thoroughly. Divide in half and shape into meatloaf. Layer sliced cheese on top of meatloaf half. Shape and add second half on meatloaf covering cheese and seal. Cover with bacon weave. Add bbq rub to weave. Smoke at 250 until internal temp reaches 155-160 degrees Rest at least 10 minutes. Take pics of your masterpiece and dig in. (I smoked mine on my Memphis pellet grill and it took about 4 hours.
