John, start eating more nutria and maybe it will make next year's list.

Bob I have had nutria - it is pretty good! About 15 years ago there was an effort by a number of famous local chefs to showcase nutria to get Cajuns to start eating it (one of the quickest ways to get a critter on the endangered species list). I had nutria stew prepared by John Folse, a local chef and celebrity. it was rich and delicious - it reminded me a little of kangaroo meat...
