Standing Rib Roast Freeze Time?

So,
Local Genuardi's has Standing Rib Roast on sale for 6.99 per lb. Rather than miss out on this price, I'd like to buy now and keep in my meat freezer until ready to be smoked on Christmas. I'll probably get a 7-10 lb'er trimmed and ask the butcher to trim from the bone.

Does anyone see any problems with it being frozen until then? Meat freezer is never opened except to put in/take out food.

If it is vac'd and cryo'd no problem. If not, it needs to be very wel wrapped--use mega plastic and then foil it tightly.

Personally, I'd leave it bone-in.

Less than a month, no worries. Use a Zip-Loc freezer bag and try to remove as much of the air as possible. You could also ask them if they could vac seal it for you.

our costco had usda choice standing rib roasts for 4.49 lb!!! the ones that were cut didn't look like thay had an incredible about of marbling but hey thats .50c/lb more than the cut up sirloing steak (yes thge rib has much more waste but still awfully tempting!!!

I don't belong to costco but I think I'll check bj's prices before buying.

Thanks for the responses guys.
