St Louis Cut Ribs

Ok I cooked up 4 full racks of St Louis Style Cut Spare Ribs for Father's day and 2 Turkey Breasts. Everything came out great and I couldnt have been happier. After reading the tips and watching the video in the cooking section for preparation for the Spare Ribs. I wondered what you guys do with the meat that you trim off? Do you guys cook it up along with the ribs? Have another way of cooking it, or simply throw it away? Anyway I was just wondering what everyone else did. Thanks Eric...
 
I cook the trimmings and either eat them or save them to add to beans, soups or any time I want a nice smokey flavor.

Be a shame to throw out that good meat.
 
Ditto. Most often I eat them (they are done sooner) but they do make good additions to various things. If I hold any they often end up chopped for enchiladas or as a breakfast meat for the next day.
 
Eric, when I trim spareribs into st. louis style ribs I usually freeze the rib tips (brisket) and use it later on for chinese ribs in the oven. I do cook the skirt and eat it as a snack while the st. louis style ribs are smoking.

If I don't cook them up right away, I'll freeze them. When my wife gets the need for sourkraut she'll thaw them out and use them in place of ribs in a ribs and sourkraut. Tastes pretty good.
 
I have a large bowl full of diced up rib meat from yesterdays St Louis cut ribs I did. I vacuum sealed half of them and threw them into the freezer till I get some good green chile verde sauce going. The other half are getting sauted in oil and garlic tonight, and being served along side some spinach and ricotta ravioli, as well as some roasted vegetables. I'm trying to branch out on my tastes, so this is actually the first time I will try eating parsnips. I bought some squash, zuchinni(sp)and carrots as well.
 
Just did this two weekends ago (4 Racks). The plan was to chop it up and save it for chili/beans.

The were all cooked with the ribs.

But - it was too good to last. Some of the cooked ends got chopped up and went into the beans during the same cook. Two got eaten with the left overs.

None left. But I will be looking for other ways on future cooks. Family liked them prepped this way so St. Louis style will be most common on future cooks of spares.
