You see, you aren't suppose to do too good on these things. If you do they apply the Army Mule Concept: if that mule pulls, hitch him up. In other words, I'll bet word spreads and you're cookin butts for every pot luck and picnic from now till the cows come home. LOL
 
awesome cook Mike, how do you guys get the bark so good?. I did a proper butt yesterday (see my other post) but i couldnt get the bark like you guys do. I just used mustard and then bad bryons butt rub @ 225-250 for 12hrs

I trim the fat cap off my butts. There is enough moisture in the butt, especially with an injection, so in my opinion it is not needed.
I get a lot more bark without the fat cap. Try it that way one time and I believe you will see what I mean.
