Spares and Picnic

Went to the store on Friday just to pick up a few things and saw that spares and picnics were on sale. I couldn't resist. I bought one of each, 5lb half picnic and 4lb slab of spares. For the cook I am using my OTS with Stubbs briquettes and Yardbird rub.

Got the meat all seasoned up

Here are a few pics of my set up. I am using a snake with 2 high and 2 wide. I used a total of 65 briquettes for the snake with several chunks of pecan.

I put the picnic on at 8:30. Temp outside was in the mid 40's and kinda windy. I wanted to keep temps between 250-275. I put too few lit briquetts on the snake to get it started and fought with the temps for the first hour. I added more lit coals and it leveled off just fine.

This is my first time trying 3-2-1 method for ribs. Here are some more of the cook in progress.

Everything turned out really good. The ribs were actually more of a 3-1.5-1, and tasted great. Thanks for looking.
