We hadn't seen our son in 5 years and he called last Saturday to tell us he had a business trip to Atlanta and was driving down to visit. I started smoking food 2 years ago so he had never eaten my Q. He uses an electric Brinkmann so I thought I would give him some WSM ribs. Thursday at noon I put the spares on the WSM with some Cherry chunks. Meathead's Memphis Dust, without pepper, was the rub.
An hour later our daughter called to say that they would be able to make it for dinner. Two racks of St. Louis cut ribs won't feed 10 people so I ran to Publix and had the butcher cut me six Pork Steaks. I fired up the CharGriller and seared the steaks. Then I put them in a foil pan with BBQ sauce and moved them to indirect heat for 2 hours.
I foiled the two racks after 3 hours - one with sauce and one dry. A little AJ in the foil. The ribs took 5.5 hours. They were the best ribs I've ever done and the first time dry rub only rack was a big hit with us three men.
My son has been shopping for a new smoker and he watched everything I did with the WSM. He was amazed at the ease of temp control and after dinner he told me he was getting a 22" WSM. I must admit I was doing a selling job because he was talking about getting a Propane smoker and I wanted to steer him towards something he can use in the Colorado winters. The WSM will go nicely with his Weber Kettle.
Life is good.
