I'm trying to do some planning for a church dinner a couple of months out. Just how many full racks of spareribs can I realistically cook at once on a 22" WSM? How about an 18"?
I've been cooking on a WSM for 10 or 15 years and have both sizes but have always gone with pork butt when I needed quantity. The only time I've ever gotten into double digits rack counts I had 3 smokers available.
I'm figuring on 1/2 pound raw weight per person plus sides.
