Its been a loooooooong time since I posted here. I've been lurking in the background though, so I figured I'd get going again. My wife surprised me with a Southwest Discada for my birthday a few days ago so today I got it out for a first cook. I Thought for sure this was going to need a good seasoning first but it was ready to roll right out of the box but since I had the bacon I figured I might as well use it. I only used a 1/2 chiminey of Trader Joes but the heating was amazing. 1lb of bacon was done in under 10min. No way am I beating that in the kitchen. First impression is great, tonight i get a stir-fry going. Pics of that later, for now 1lb of goodness

Those are the two threads that sold me.

Put an order at the Wok Shop for tools but its gonna be a few days till they arrive, also have a few burlap bags on the way too. Now I need to find me a pair of those chopsticks you have. Looking all over the net but the longest I could find was 17". when I was at HD eariler today they had Zinc, Aluminum, and Steel rod in various diameters. The zinc I'm not so sure about cooking with and the steel was a little on the heavier side but the aluminum should work out well if I can find some real ones.
 
I'm going to get my first real cook going tonight. In the meantime I made up some brackets to lift it up a bit. Without the brackets it rests on the handles and leaves about 1/4' gap for air. Last night I used the Charcoal ring from my WSM resting on some brick. That worked well too. Here is what I rigged up.

and I have about a 2" gap. I can adjust this down a bit if i need to with a little more bending.

Got the first cook off without a hitch.
I used about 3/4 chimney Trader Joes. Next time a full chimney is the way to go. Needed just a touch more heat

The chicken is marinated in teriyaki, garlic, fresh ginger, & pepper. The rest, well you can see that.

It was delicious. This was the first time I ever used fresh ginger. I just happened to have some laying around as I was adding it to food for my saltwater fish. I used a micro plane to shave a bit for the marinade. The taste really came through, I'll be using it again. And the best thing is the disk cleans up like a champ. This is officially one of the best birthday gifts I've received in a while.

This is the reason I had fresh ginger on hand.
