Sous vide short ribs?


 
They don't look like short ribs to me. I've had ones from Costco where they come in thick strips, more like steaks.
I don't think that's a tri tip either. Sure looks like one though....but I highly doubt it is one.

At Restaurant Depot, I buy packs of short ribs that come in 5 bone plates, roughly 10-12" square. The meat is thickest at one corner, and thinnest at the opposite corner. If you removed all the meat from the ribs, and cut it in half along the diagonal, you would have a triangle of meat, all with a steak thickness. Is this what they use, I can't be certain, but I do know that sous vide short ribs are some of the best eating beef you'll ever have.
