Decieded to try something different for dinner tonight. Followed an Alton Brown/Good Eats receipe for the basics, but cooked on the grill.
Start with prosciutto seasoned with S&P and some Thyme. Trim a tenderloin up, cut in half and place on top, reversing the halves so that it rolls up nice.

Put some chopped, dried apples between the pork halves.

Roll the package up.

Then rollout some puff pastry, and spread on ground mustard. Put the pork wraped in prosciutto on top

and wrap.

Brush on an egg wash and grill on foil with indirect heat (400 F)

Every 10 min or so rotate for even cooking. Cook for 30-35 min until 160 F, last 5 min use direct heat to firm up the bottom (I didn't do this). Rest for 10-15min
