Smoking wood


 
There's different references on the internet, but generally, IF IT PRODUCES A NUT OR FRUIT, you can smoke with it.

There are some exceptions, though. Sassafras is good, for instance, and I don't think it produces either. Fruit woods are mild, but nut woods vary. For instance, pecan is milder than oak and hickory, but walnut is regarded so strong that most folks don't mess with it. Mesquite is quite strong, as well. All I've ever used it for was grilling steaks, but might try smoking a brisket with mesquite one of these days. I'm hesitant to do so, though. Dr. BBQ says that mesquite smoke smells like something that came from the devil's *** crack.
