Smoking in the garage?

I have cooked @ 350 with the Reflectrix, with no noticeable scorching or burning that I could tell.

The lid handle will get extremely hot and smoke-stained, so I learned to wrap it with foil before a cook.

The jacket will let you maintain a high temp cook even in a cold drizzle, which is usually a killer.

I have a detached 2 car garage with a dirt floor and I cook in it all the time. The grills and WSM are kept away from the walls and I've never had any problems, and I like the fact that it's a more controllable environment. If an ember happens to fall through a vent there's no wind to blow it around so it dies there in the dirt, and something knocking over the grill or smoker is about as likely as the Orioles winning the World Series this year.

If grills and smokers are such fire hazards when used under cover, why don't they start more grass fires when used outdoors? Frankly, a WSM seems like a more secure environment for a fire than a fireplace does.

If this is a detached garage with a concrete floor, and reasonable steps are taken to keep the smoker away from anything flammable I don't see what the danger is.
