Celebrated WSM day over the whole weekend. Cooked Persian kofte, pork tenderloin, pork leg and a small beef joint. Used my 18 for searing, grilling, roasting, smoking with and without the water pan. Such a versatile cooker and so easy to control.
My big lesson over the last couple of years is not to treat it only as a low and slow machine- it can be used in so many different ways and seems to excel at all of them! Also really enjoying Bill Gillespie’s books- very informative
