Smoking in aluminum pans

Hello ! I have had my WSM about 10 years and love it!! What I don't love is the cleanup. I dislike cleaning the grates the most. When watching BBQ Pitmasters I noticed that many of the pros put their meats in aluminum pans. This would eliminate the grate clean up. Has anyone tried this on the WSM? I cook mostly chickens and brisket.
 
I do it for butts and chuck roasts. You can set a small raised cooking/cooling rack in there to keep the meat from braising in it's own juices if you prefer, I rarely bother with that.

Takes me a minute or two with a hot water hose to clean the grates. I can't see how a pan would not mess up the smoking part.
