Smoking A Three Pound Butt

Does anyone know how long it takes to smoke a boneless three pound butt to 195° in a 14.5" WSM?

I have one marinating (no dry rub) in the fridge overnight, and I would like to have it for Sunday.

Start early. You will have plenty of time to raise heat or hold in cooler.

High heat could be 3 to 5 hours.
Low heat could be 5 to 12.

If you busy with side dishes or other stuff you can always cook the day before and reheat later.

Rule of thumb is 1.5-2 hrs per Lb depending on pit temp.
I never cooked one that small, but heard they can be quite stubborn, taking longer than usual.

Took me about five hours. Pit temp ran above 300° for much of the smoke (with water in the pan), and then began to scale back as the coals began to burn down.

The boneless butt tastes good, but I may try a slow cooker next time. Any recommendations for seasonings?

Come Sunday, the butt tasted even better than when I took it out of the smoker.

My only regret was no hickory wood on hand for smoke, but I did use cherry and peach.

I like a nice liberal coating of Bad Byron's Butt Rub.
