I just found this site the day before yesterday and I'm pretty stoked about it. I decided to get a WSM and have a 22.5 on the way. It should be here around the 18th-20th of June.
I been doing ribs, chicken, and pork butts etc. on a Weber kettle for about 3 years, so Im real excited about getting a dedicated smoker.
I already own a Maverick-732 and a thermopen that I bought for my kettle cooks. I also got a storage shed full of Kingsford Blue and all the hickory, apple and cherry wood raring to go.
Thanks to you guys on this site I learned about the Cajun Bandit door and the Southco compression latch and have them on order. My welder buddy is on standby to mod some handles to the coal grate and
fire ring.
I'll wait till I get some cooks under my belt before I consider doing anything else to the unit, as these mods might be all I need.
I'm headed to Home Depot shortly for some materials to make a dedicated pad for it. Did I say I was a bit excited!
I've never done a brisket in my life, so I guess there is no reason to wait any longer.
You all have some great looking smokers and have some really ingenious mods. I cant wait to try some of the recipes on here.
Got about a week worth of waiting, but the hand tools are ready for the assembly and Ill be sure to let you guys know if the brisket was edible or if the dog had a better day than me.
Any tips are more than welcome concerning the smoker or tender brisket tips and maybe a secret rub.
I look forward to getting to know you all and sharing ideas.
