Smoked Salmon and Chicken

I meant to post these last week but unfortunately I threw out my back so they didn’t get posted until now.

I had two nice pieces of salmon my good buddy TimBear gave me that I wanted to smoke, so I brined them then let them air dry for a spell while I fired up the offset. I used pecan and maple for my smoke wood. Just before I placed the salmon in the smoker, I gave them a nice coating of brown sugar to add a slight sweet glaze. I also threw on two whole chickens smothered with various seasonings. I wanted to make sure the meat stayed moist so I picked some oranges off our tree, sliced them and stuffed em in the chicken along with more seasoning. Everything turned out great and the chicken was as moist as I hoped it would be.

Last but not least are the two turkey breasts I had grilled, tons of meat but they were a little dry. I’ll try smoking them next time.

That reminds me, I haven't done smoked salmon is awhile. Your looks great! Hope the back is feeling better.
