Smoked Homemade Italian Sausage


 
Wow that looks really good. I have been contemplating buying a grinder to do things like this. Awesome job.
 
Great idea for trimmings! How did it taste? What would you do the same/different?

Tasted great. Used cherry so the smoke flavor wasn't overpowering. Next time I'll probably add some cayenne or red pepper flakes to part of the batch to add a little heat.
