Smoked Garlic Polish Sausages


 
I love a good garlicky polish and those look great! What did you use to make them spicy and what type of smoke wood, fruit or nut?

... thanks! - for the spicy, I have a bag of something called 'Fragrant Hot Chilies' which I like to use because of the grind - its a little course and has whole seeds in it as well so you can see little bits in the meat after the grind. They are Chinese peppers. For wood, it was 100% apple, which is fairly standard in these parts.
