Just thinking about smoking some chicken legs. Is this possible? It is worth the time? I`m thinking of marinating them in some olive oil, lemon, rosemary and garlic for about 24 hours, then smoking over apple wood. Ideas?
Sure can. You plan sounds good. I cooked them for Pulled Chicken Sandwiches. You can cook them low & slow or hot & fast, your choice. The longer, the more smoke flavor. Cook them at high temp and finish over hot coals for best skin if eating that way.
Its Sunday night, put 2 dozen drumsticks on the WSM around 10p Eastern time. Never done this before so I`m not sure how long it`ll take for them to cook through. I`ll give `em a look around 1a.
