Smoked chicken + A1 Cracked Peppercorn with grounded ancho chili and thyme
Our local supermarket (Albertsons) is having a sale on chicken for $0.88/lb. Bought two packs.
Brined the chicken overnight in kosher salt, sugar,cider vinegar and water. Patted dry, and applied A1 Cracked Peppercorn rub mixed with grounded ancho chili and thyme.
The cook went extremely well. I only needed 3/4 of the weber compact chimney along with a chunk of apple wood and mesquite to keep the Jumbo Joe lit for the entire cook--including the grilling time at the end.
Cooked for two hours total. Maintained 230 to 250 degrees. Flipped the chicken after an hour. 15 minutes before the second hour mark, I loaded up a spray bottle with White Zinfandel and continued to mist the chicken with it. Left a nice aroma once it was all done. Then I grilled the chicken on high heat while brushing it with Baby Rays Honey Chipotle sauce.
Served over plain rice. No addition seasoning needed
